Components of Shark Cartilage:: Is composed of approximately 41% gray, 39% protein, 12% of carbohydrates, 7% water, less than 1% of fiber and less than 0.3% fat. The ash contains 60% of calcium and phosphorus, in the ratio of two sides of a calcium phosphorus.
